The Sauce Lab: Three Easy Mixes

A small spoonful can change the whole burger. Start with three simple sauce combinations, learn what each one brings to the bite, and find a balance between creamy, sharp, and smoky. These small-batch ideas use familiar ingredients and leave plenty of room for your own taste.

01

The tangy house mix

For two burgers, mix 2 tablespoons mayonnaise, 1 teaspoon mustard, 1 teaspoon ketchup, and 1 teaspoon finely chopped pickles. Taste before adding salt: the condiments may already provide enough. Spread a little on the toasted bun and keep the rest on the side.

02

The smoky tomato mix

Combine 2 tablespoons ketchup, half a teaspoon smoked paprika, and half a teaspoon vinegar. Add a pinch of chilli flakes if you like heat. This is a quick condiment, not a cooked barbecue sauce. Try it with a mushroom filling or a simple beef burger.

03

The lemon and herb mix

Stir 2 tablespoons plain yoghurt with 1 teaspoon lemon juice and 1 teaspoon finely chopped parsley. Add a small pinch of salt and black pepper. The result is fresh and lightly sharp. Pair it with chicken, chickpea patties, or a crunchy cabbage topping.

04

Taste with the burger in mind

A sauce that tastes strong on a spoon can become balanced inside a bun. Try a small amount with a piece of your chosen bread and topping. Add sharpness a few drops at a time, and remember that cheese and pickles bring salt of their own.

05

Keep the process simple

Use clean utensils, follow the storage instructions on each ingredient, and make only what you need for the meal. Check labels for milk, egg, mustard, and other allergens when preparing food for someone else. A dairy-free yoghurt or egg-free mayonnaise changes both texture and flavour, so taste again after substituting.
